What channel for my amp is good?

I have 2 subwoofers in my car, 2 Kicker 10DC122 (100-300 watts rms and 600 top peak). Should I use a mono amp or 2 or 4 channel? If I go mono I could always use the channels on my head unit right? Also how many watts in the amp is good to power my subs? 125 watts RMS x 2 at 5 ohms is good right? As much info as possible would be nice! thanks!
